Carrot Salad

NB: 1 x serve Collagen = 1g or ½ tsp Fountain of Youth Lifestyle™ Tripeptide Collagen
Lunch to Late Afternoon.
Ingredients:
- 2 -4 fresh carrots (grated)
- 1 Red onion (finely sliced)
- ¼ Red cabbage (finely sliced)
- ½ cup slivered Almonds (lightly toasted)
- ¼ cup olive oil.
- Juice of 2 lemons (fresh)
- 2 x serves Fountain of Youth Lifestyle™ Tripeptide Collagen
- Salt and Pepper to taste
Method:
- Grate the carrots, then finely slice the onions and cabbage, add to the mixing bowl (use a food processor if you have one, it is much quicker)
- Lightly toast the Almonds in a pan, set to the side.
- Add the lemon juice, Fountain of Youth Lifestyle™ Tripeptide Collagen, salt and pepper to a clean jar, shake vigorously until the Fountain of Youth Lifestyle™ Tripeptide Collagen has dissolved completely, this might take a minute, now add the olive oil and shake again to mix.
- Add ½ the almonds, pour over the juice mix, gently mix well to combine.
- Pour over the remaining almonds and serve.
- Add some chopped parsley for a pop of colour and extra taste.
*This makes a great calorie light meal or is a perfect summer side dish.
